Family farmers in Mexico cultivate this unique red heirloom maize, using traditional regenerative growing practices and working to preserve the rich genetic diversity of corn in the region. You can use it the same way you would a white or yellow cornmeal, and it also makes a gorgeous soft polenta.
It’s also perfect for: baking such as cornbread and muffins, or breading foods for frying.
